My New Recipe

Ok so this is a recipe for a fish and rice medley.  If you make it, let me know if you like it.  I haven't tried it yet . . .

Ingredients

Serves Two . . . (I hope)

-1 cup of uncooked brown rice OR 1 box of uncooked Uncle Ben's wild rice
-2 fillets of catfish OR 16 medium-sized shrimp
-1/2 cup red bell pepper
-1/2 cup green bell pepper
-1/2 cup corn
-10 white mushrooms
-Assorted flour, cornmeal, salt, and pepper
-1/2 cup cooking sherry wine
-1/4 cup vegetable oil
-1/4 cup lemon juice
-4 sprigs of any of these herbs: rosemary, parsley, dill
-1 lemon

Cooking Instructions

1. Cook your choice of rice.  When done, lay aside the pot but make sure it is still warm.
2. Mix together the flour, cornmeal, salt and pepper and coat your choice of fish in it.  Fry the fish in a large pan.
3. Chop up assorted vegetables into small pieces.  Sauté the vegetables in vegetable oil.
4. Take out the fish once it is cooked and lay it aside, making sure to keep it warm.
5. Lay rice spread out onto a serving platter. 
6. Pour the cooking sherry and lemon juice into the large pan.  Saute the vegetables in this.  When done, mix into the rice.
7. Saute the fish in the sherry and lemon juice.  When done do one of the following: If you chose shrimp, go to step 8.  If you chose catfish pick either step 9 or 10.
8. Mix the shrimp into the pilaf.  Finely chop the herb(s) of your choice and sprinkle them on top of the dish.  Pore the remaining gravy (sherry and lemon juice) on top of the dish.  Cut up the lemon.  Give two lemon slices to each person.  Enjoy your meal!
9. Lay the fillets of catfish on top of the rice pilaf.  Lay two sprigs of herbs on top of each fillet.  Pore the remaining gravy (sherry and lemon juice) on top of the dish.  Cut up the lemon.  Give two slices to each person.  Enjoy your meal!
10. Cut up the fillets of catfish and mix them into the rice pilaf.  Finely chop the herb(s) of your choice and sprinkle them on top of the dish.  Pore the remaining gravy (sherry and lemon juice) on top of the dish.  Cut up the lemon.  Give two lemon slices to each person.  Enjoy your meal!

*****NOTES*****

-The salt in the fry batter, the sprigs of herbs, and the lemon slices are optional.  They only add more flavor to the dish.  If you would like it more plain, do not add them.  The same goes for poring the gravy on at the end.
-If you do not want/like all of these vegetables simply either:
a. Substitute a similar amount with another vegetable
b. Just leave it out
-Please note I have not made/tried to make this recipe yet.  Please comment on how it tastes if you try it.
-Sorry I did not specify times for cooking the fish and vegetables.  It will depend on the type of fish you chose, how finely you chopped the vegetables, how tender, crispy, etc you like to cook it, and what kind of oven you have.
-I did not specify the amount of the flour, cornmeal, salt or pepper.  It depends on how much batter you want.  I would recommend however 1/2 cup of flour, 1/4 cup of cornmeal, one shake of salt, and one or two shakes of pepper.

Once I cook this I will send a picture of what it came out to look like.  Who knows how long that will be . . . LOL.  Anyways, I will blog later!  Goodbye for now bloggers!
